Construction Cuisine - Whiskey Glazed Pork Chops
Pork Chops are such a great budget-friendly choice when cooking for your crew & this whiskey glaze adds LOADS OF YUM. I bought bone-in thick chops from our local meat market but you could use standard chops as well.
PORK CHOP SERVICE ANNOUNCEMENT
The most important step when it comes to Pork, in my opinion, is to give your piggies a bath aka make sure you take the time to Brine the meat. This step ensures tenderness on a cheaper cut of meat. I either use 1 QT of Water or 1QT of Apple Cider combined w/ 4 TBSP of Salt and bathe the meat for atleast 15 minutes. An hour if I have time.
INGREDIENTS
4-6 Pork Chops
1/2 Cup Apple cider
1/2 Cup Whiskey (We like Knob Creek)
3 tbsp Brown Sugar
2 tbsp Dijon Mustard
2 tbsp Butter
2 tsp Apple Cider Vinegar
1 tsp Vanilla Extract
Salt & Pepper ( I love Jacobsen Sea Salt from Williams Sonoma)
INSTRUCTIONS
Discard Brining Liquid and pat Pork Chops dry. Season them with the salt & pepper. You can use any smokehouse rub you like as well.
Place the chops on the grill. Grill until the chops are slightly charred and cooked, about 20 minutes. Or Sear them in a pan with Oil 4-5 minutes per side .
While the Pork Chops are cooking prepare the Whiskey Glaze.
In a bowl, mix together all of the ingredients, EXCEPT BUTTER, and cook them in a pan, over medium high heat. The mixture will start to bubble. Once that happens whisk it until its to your desired glaze stickiness. Turn off the heat and whisk in the BUTTER. Place pork chops in the glaze, presentation side down, for 5 minutes.
These chops are sweet, and sticky, and sure to make any construction worker smile!
